Beef meatballs

Ingredients:


1/2 Pound of ground meat mixed
1 Large tomato, chopped
1 Medium onion, chopped
2 Tablespoons rice
2 Eggs
1 Branch of parsley
1 Sprig of chopped Oregano

1 Sprig of minced Mint
1 Hint of thyme
3. Cooked tomatoes
1 Piece of onion

Preparation:


In a bowl put the meat, chopped tomato, onion, herbs, salt, eggs, thyme and rice. Everything turns and balls are made.

Blend cooked tomatoes and the piece of onion, are passed through the sieve and it is cooked in a little oil, add water and since this boiling add the meatballs and let Cook and finally be seasoning with salt.

Sweet Mole


Ingredients:




1 Chicken cut in pieces and without skin

5Chiles widths deveined and oil

5 Chiles Mirasol deveined and oil

1 1/2 Tablet of Chocolate

50 Grams of almonds

50 Grams of shelled walnuts

50 Grams raisin

100 Grams of Sesame gold

1 Cinnamon wand

10 Peppers

5 Nails of smell

1 Hint Marjoram

1 Hint of cumin

6. Boys piloncillo cones

2 Garlic tooth

Sugar to taste

1 Onion slice and with




Preparation:




Chicken washing very well and gets to cook with a piece of onion, once cooked chicken parts are separated, the broth is used to blend the ingredients, once Smoothies are passed through a sieve and is cooked, is lumped with sugar to taste.

Beef steak with onions

Ingredients:


1/2 Kilo of beef steaks
2 Onions chopped in slices
1 Kilo of Tortillas
2 Sprigs of chopped Cilantro
Salt and pepper
Oil

Preparation:




The meat is cut into small pieces and starts frying with salt and pepper, since this frit is added sliced onion to be cold and is transparent.



Taquitos with meat are made and tomato sauce and chopped cilantro is added to them.

Chicken molotes


Ingredients:




1. Cut chicken into parts and without skin

1 Large onion cut into wheels and Peper

1/2 Tablet of annatto

1 Cup of sour (or fresh) orange juice

2 Garlic tooth

1 Hint of cumin

1 Hint Marjoram

5 Peppers

2 Raw carrots, cut in strips

2 Raw potatoes, cut into strips

Red rice soup

2 Tablespoons of oil

Aluminum foil

Salt




Preparation:




Liquefies achiote, garlic, juice of Orange, marjoram, salt, oil, cumin and pepper.



Chicken washing very well and placed in a container, add what licuamos and let stand 30 minutes.



Paper pictures cut aluminium and is put to each box: 1 piece of chicken, onion slices, potatoes, carrots, 1 tablespoon of rice soup and 2 tablespoons of the chilito liquefy. Sprinkle with ground pepper and be lumped with salt.

Clams a la Mexicana


Ingredients:

2 kg of clams
2 Large tomatoes, peeled and chopped
2 Tablespoons Parsley
2 tablespoons onion
2 green chilies
1 teaspoon Cilantro
4 Tbsp Olive Oil
2 Cups Cold Water
Salt and pepper to taste


Preparation:


Wash clams well and put everything and its shell into a saucepan, cover with the tomato, parsley, onion, chile and cilantro all finely chopped.


Add the olive oil and water. Season with salt and pepper, cover the pan and let simmer until shells open and the sauce thickens. Served in its own shell.

Fish meatballs

Ingredients:


½ Kg of fish to taste (mojarra, lisa, smallmouth bass, carp, etc.)
½ Kg of tomato
½ Onion, chopped
10 Pitted olives
1 Poblano Chile rajas in
1 Cup flakes, ground corn or bread for breaded
1 Clove of garlic
1 Tablespoon parsley
2 Eggs

Preparation:


Prepares the sauce blending the tomato, onion, olives and chile poblano, sneaks and gets to fire slow.

Fish flakes with your hands and mix with bread to empathize, chopped garlic and parsley. Since this well blended add you 2 whole eggs until a paste forms.

The balls are formed and are added to the boiling sauce, and leave for 10 minutes or until cooked.

Steak in peanut Mole (peanut sauce)

Ingredients:


1/2 Kilo of beef steaks
1. Wide Chile browned in oil and deveined
1 Chile Miraso browned in oil and desvenadosl
1 Clove of garlic
1/2 Roll sliced and browned in oil

5 Peppers
3 Nails of smell
2 Medium-sized tomatoes cooked
100 Grams of peanut Golden
1 Hint Marjoram
Oil

Preparation:


They fry the meat in a little oil

Blend the remaining ingredients, since very well liquefied are passed through a sieve and is vacea in a pan with hot oil and you are adding steaks one by one, let it boil so that it thickens a bit.
Be lumped with salt to taste
